I’ve been preparing this quick sausage spinach tomato pasta dish a lot this summer. And it occurred to me that some of you might like it too. It is wicked fast to prepare, really good, and right or wrong I’ve convinced myself that it also relatively healthy.


Sausage, Tomato and Spinach Penne

one package chicken and turkey Italian sausage
4 cups Penne wheat pasta
2 cups raw spinach
container of cherry tomatoes
olive oil
salt, pepper and (if you want) garlic salt
cheese, fresh shaved parmesan is good as was yodeling goat gouda

I like to quickly hit the sausage with the grill even though it’s pre-cooked. I put the tomatoes in a little Calphalon loaf pan, drizzle with olive oil and a couple of shakes of garlic salt. Tuck them in next to the sausages on the grill on low heat for about 10 minutes.

If you’ve never had grilled cherry tomatoes, you will not believe how good they are.

Penne goes into boiling water. Then, here’s my little trick. Line the strainer with the raw spinach. When you pour the pasta (and hot water) over, it is instantly and perfectly steamed.

It all cooks in mere minutes. Chop up sausage, dump the whole mess into a big bowl with more drizzles of olive oil and top with cheese.

Done. I know, right?

Would also be delish with just spinach and tomatoes and could be vegan with soy cheese. Try it and let me know what you think.

An aside: I didn’t take a pic of the dish all put together because food photography is hard ya’ll. A bad image can serve as more of a deterrent than no image at all. Or it doesn’t impact anyone’s opinion one way or the other. Has the grey, sun-faded hotdog poster at the SevenEleven ever made you go, “You know what? A hotdog DOES sounds good.”? If you go in there with the intention of grabbing a dog off the roller, you’re drunk or pregnant, feeling particularly self-loathing, or are a 17 year-old boy. Either way the photography wasn’t particularly influential.
